Milk phospholipids are predominantly found in the membrane that surrounds fat globules. The so-called milk fat globular membrane contains a triple layer of phospholipids. This makes cream and Anhydrous Milk Fat (AMF) processing streams an excellent source of these important substances, which are associated with a wide variety of human metabolic processes.
Phospholipid Concentrate is obtained by microfiltration of the liquid stream derived from production of AMF. The resulting concentrate is spray dried to produce a creamy tasting, free flowing powder that is rich in phospholipids.
